Ok so my question is this, if I'm

Say I am being attacked by 4 creatures, and I have 4 creatures myself, if one of them happens to be dauntless escort can Dauntless Escort. Can I block and then sacrifice dauntless escort, making my creatures indestructible?

With him leaving the field, does the creature he was blocking still cause deal me damage? I guess a follow up question would be can a creature block and then activate an ability even a ability that requires it to tap?
