Say I am being attacked by 4 creatures, and I have 4 creatures myself, one of them happens to be Dauntless Escort. Can I block and then sacrifice dauntless escort, making my creatures indestructible?

With him leaving the field, does the creature he was blocking still deal me damage? I guess a follow up question would be can a creature block and then activate an ability even a ability that requires it to tap?

In the Declare Blockers Step Blockers are declared, then priority is passed.

Normally, when a player has priority they can activate abilities and cast instant spells. Thus you have the opportunity to activate Dauntless Escort's ability before damage is dealt. In addition, the creature that Dauntless Escort blocked deals no damage. The opponent's creature is considered 'blocked' and will deal no damage even though there is no longer a blocker (creatures with trample will recognize that they have exceeded the toughness of all blocking creatures and deal damage normally).

If a creature has already been declared a blocker, and taps, it remains blocking (unless the golden rule applies)
